Victoria Sponge Cake

225g Sugar
225g Margarine
225g Flour
4 Medium eggs
2 eight inch cake tins

  • Cream margarine and sugar together
  • Beat in the eggs
  • Fold in the flour
  • Divide the mixture between the 2 tins
  • Bake in oven for around 20 minutes - electric 180 or gas 5. Checking half way through and reducing temp to 160. Bake until golden and springy on top
  • Remove from oven and place on cooling tray
  • When cold, fill and decorate to your taste
