Rhubarb Crumble
500g Rhubarb
100g Caster Sugar
  • Wash and chop rhubarb into thumb/little finger size chunks.
  • Transfer to pan and add sugar. Cover and simmer on a low heat for about 15 mins.
  • Keep stirring and when soft but holding its shape transfer to small-medium oven dish.
140g self raising flour
85g butter
50g brown sugar.
  • Turn oven on at 180 to preheat.
  • Rub together the flour and butter until like breadcrumbs.
  • Add the sugar and stir.
  • Scatter on top of the rhubarb.
  • Bake in oven until golden brown on top.
For apple crumble follow the same instructions, to save time you could always use fruit from your fruit bowl (no need to cook and no need for the sugar) or frozen fruit
